Fryers - 8000 Series Control - OF49C, OF59C, PF46C, PF56C - KFC
q Drop signal is on display. -
q Add or remove cooking oil to make level between oil level lines.
q With safety gloves and drain hook, lower loaded basket into cooking oil.
q Press lit channel button to start timer - (sample time shown).
q When timer at :00, buzzer sounds and display shows - press lit
channel button.
q Flashes on and off for ten seconds, then - .
q Using safety gloves and drain hook, remove basket from fryer.
q Rest basket on drain hook in lid lock block to drain excess cooking oil.
q After each round of cooking - scrape crust line, brush heater coils, and wipe
lid dry.
q Press exit cool button to begin next round - or (sample
temperature shown).
q Cooking - pressure frying - see pages 21-22.
q Drop signal is on display. -
q Add or remove cooking oil to make level between oil level lines.

q Close and lock lid with handlebar.
q Press lit channel button to start time - (sample time shown).
q When timer at :00, a buzzer sounds and display shows - press lit
channel button.
q Flashes on and off for ten seconds, then - .
q DANGER: the fryer contains hot liquids under pressure. Release can cause
severe burns or death. To safely open lid:
q Complete cook cycle (display shows and buzzer sounds).
q Do not touch handlebar to open lid until pressing down on lid lock causes
the lid to lower.
q Then, with the lid in lowered position, move handlebar to open.
q Using safety gloves and drain hook, remove basket from fryer.
q Rest basket on drain hook in lid lock block to drain excess cooking oil.
q After each round of cooking - scrape crust line, brush heater coils, and wipe
lid dry.
q Press exit cool button to begin next round - or (sample temp.
shown).
q Daily care - to be done at the end of each day - see pages 23-26.
CAUTION: Prior to using appliance for the first time, perform the daily cleaning
procedure listed on pages 23 - 26.
q Note: Emptying the collector and filtering may have to be done at some point
during the day depending upon how many rounds are cooked and how
much breading builds in the collector. Typically 20 rounds of product may be
cooked before having to empty the collector and filter the cooking oil.
q Turn power OFF - display remains on last setting.
q Scrape crust line and brush heater coils.
q Place metal container of filter machine under drain valve.
q Wearing safety gloves, open drain valve.
q Allow cooking oil to drain completely.
q Wearing safety gloves, remove heat plate with drain hook.
q Wearing safety gloves, use displacer tool to force remaining cooking oil from
fryer through drain and into container.
q Wearing safety gloves, remove collector with basket drain hook.
